The bridal outfits are tied to the choices in different chapters, specifically Chapter 3, Chapter 8, and Chapter 9. In your first playthrough based on your choices, you will have Tifa, Aerith, and Cloud wear a specific outfit in Chapter 9 based on the choices you've made in Chapters 3, 8, & 9. Then you'll have to go back after completing the game and replay part of the game again at least 2 more times to make different choices to obtain the remaining six outfits. At the end of the trophy description, you will find a recommendation on how to most efficiently tackle this trophy.
